The concept of ChocoSol Traders was originally founded in 2004 in Oaxaca, Mexico, by Michael Sacco, and has been based in Toronto since 2006. The origin of our name has links to 3 languages: English, Spanish, and French. ‘Sol’ is from the Spanish word for ‘sun’ and refers to our first 1,000 kilograms of cacao that were roasted with solar power in Oaxaca. In French, ‘sol’ means soil, acknowledging that you must have the soil of the gods in order to have the food of the gods. He kickstarted an obsession back in 2006 that would drive him to create hundreds of batches, brewed in kitchens, barns, backyards and basements; some great ones, some “interesting” ones, and some crazy ones. Actons Lower Shannon Farms has been around for 90+ years. When Robin met John he had recently moved to Canada from Dublin, Ireland and was working as a dairy inspector with big plans and big dreams. Unsure of his long term plans and whether he would continue on to New Zealand; he met Robin, got married, had 3 children and stayed in Canada! Today they boast a 16000 square foot greenhouse that runs 365 days a year. They raise free range cattle, sheep, chickens, laying hens (free run eggs!), goats, and turkeys. They make jams, jellies, pickles and more for all to enjoy! Fallentimber Meadery is a member of the cottage winery industry in Alberta. Our doors officially opened to the public in the fall of 2010. Great mead starts with great honey, and honey is something that the Ryan family knows very well. Back in 1969, Blake Ryan started the family business when he purchased the family farm and established his first hives. Kevin Ryan carried on the profession of beekeeping and continues to do so as part of the Fallentimber Meadery. Ryan’s Honey is sold at the Meadery store and select stores in our region.
