Founded in 1998 by David and Evelyn Ernst, Terra Beata grew first from a patch of undeveloped peat bog sold at a mortgage foreclosure to a 12 acre cranberry farm on Heckmans Island, near Lunenburg Nova Scotia. From there, we learned to clean, freeze, process and market cranberries. We now still operate the original farm, plus a 50 acre farm in Aylesford, and a 12 acre farm in Tremont, NS. In 2018 we opened a facility in Sackville NB at the center of Atlantic Canada where we receive, clean and freeze fresh cranberries from our farms plus about 12 other farms in Atlantic Canada, for a total of over 5 million pounds of fruit per year. Frozen berries packed in Sackville travel to industrial customers around the world. Our original facility on Heckmans Island produces juice, dried fruit and cooked products sold under the Terra Beata brand at grocery stores across Canada as well as serving industrial and private label customers. La Femme Nikketo – I started baking in my early teens after I had developed a severe nut allergy and learned baking out of necessity, since at that time nut-free options or bakeries didn’t exist. And so I always found myself having to adapt recipes to either remove or replace the nut ingredients. I would have to research what would be right, or if a particular product was safe-and then experiment in the recipe. Need can drive passion and it turned out that I loved to bake. Fast forward to my adult life, married to a pescatarian for 20 years, mother of a teenage daughter who prefers chicken fingers to anything else. I always felt like I wasn’t running a restaurant when it came to family meals so resisted making ‘two dinners’ based on everyone’s dietary needs and tastes but still didn’t want to pull my hair out trying to please my hangry family come supper time. Bringing our hot sauce products to the public started in December 2020. This was during the Covid pandemic, but it wasn’t really why we started Need the Heat. After making hot sauces for friends and family (can you say ‘Pine in My Arse’?) for many years, we decided to create this little side hustle. Our main prerogative was ensuring we paid attention to all of the details that made our sauces unique. Online sales and word of mouth prompted us to open a booth in the 400 Market in December 2021. In Summer of 2021, we developed our ‘Candied Menace’ which is now our most popular product, amazing to see people’s love of these sweet jalapenos! Forward to Summer 2022, we’re in several grocery stores and expanding our reach and selection.
