Founded in 2003, installed in an open bakery, Bis la boulange is a gourmet place where food artisans work passionate about bread, pastries and other treats. They like flour, cereals, butter, spices, cream, Atlantic salmon, chocolate, garlic flowers, maple syrup, mascarpone, Ghyslaine raspberries, small strawberries from Mireille, Herman’s bohemian fillet, Michèle’s salted herbs, Damascus plums, etc.
Each bake is made up of around ten different breads including the Marquis, a tradition in Rivière-du-Loup, the baguette made with unbleached flour while the other breads are made with stone-ground flour from Moulin La Pierre.
