Grain like an apple is the most nutritious right after the skin is broken. Once the outer shell of the grain kernel is broken, the inside (the flour) begins to oxidize. When the oxidizing process begins nutrients start to break down. Grinding grain fresh and using it soon after provides you with the nutrients normally lost in processed foods.
Since the most nutritious parts of the food is easily digested by all forms of life, the best way to preserve food is to remove the readily digestible parts. Adding preservatives to the processed foods allows big companies to process more food and ship it further distance all at the expense of the nutrition of the food.
By buying your grain fresh and having it fresh ground keeps the nutrients in. As we grow older our digestive systems find it harder and harder to extract those badly needed nutrients from the processed foods. We then end up supplementing our diets with vitamins and extracts at an even higher cost.
