Birch Syrup is a unique syrup of the northern forests. At Uncle Berwyn’s Yukon Birch Syrup we make our birch syrup from a beautiful birch stand in central Yukon. Birch syrup is made in much the same way as maple syrup but with the sap of birch trees. There are some key differences between maple and birch. One is the amount of sap it takes to make a given quantity of syrup. It takes 40 litres sap to make one litre of maple. In a good birch stand it takes double the amount of sap, 80 litres to make one litre of syrup. A lot more work for the same amount of syrup! Another difference is the taste, Birch Syrup is a much darker, stronger and richer tasting syrup than maple. Lastly there is the difference in the nutrition of the two. Birch syrup is mostly fructose sugar, same as in fruit, while maple has sucrose, same as table sugar. Birch is also packed with nutrients. Bella Hill Maple Syrup was founded in 2007 on the lower slopes of Nipissing Ridge just off Hwy 534, 7 km. west of Powassan on Bella Hill Road. Dan and Lori Costello had been making maple syrup on a small scale (150 buckets) for 20 years before deciding to make the big leap expanding to 1,900 taps and still growing! Tours are available on Weekends and Holidays from 10 am to 4pm during late March and early April. On Weekdays, call ahead if you want to be sure to catch the Costello’s! The maple syrup production process gets its start from one of nature’s true phenomena. In springtime, when the nights are below freezing, water from the soil is absorbed into the maple tree. During the day, warmer temperatures of about 40 degrees Fahrenheit create pressure that pushes the water back down to the bottom of the tree, making it easy to collect the precious maple sap. Our grandfather was one of the first in the area to construct a building, as well as using a new method of extracting the water with an evaporator. He advanced from wooden spills to steel spills, and collected the sap with horse and sleigh. Our father carried on the tradition. He used more modern equipment such as corrugated evaporators, lids on cans, and plastic pipe which ran from one tan house to the main camp. With our father we expanded using pipeline to all trees, vacuum pumps, reverse osmosis machines and forced air evaporators. The tradition continues with our son. Prestige Maple Products started in 1995 when the Lavoie family bought its first sugar bush of 2000 taps in Témiscouata, Quebec. It was the beginning of a long adventure characterized by the acquisition of several sugar bushes to reach up to now a total of 100,000 taps. Since the passion for maple is at the heart of the family business, the Lavoie family created “Sirop de l’Est” in 1998. This new branch of the enterprise managed distribution and exportation of bulk maple products reaching the equivalent of several million pounds of maple syrup per year. Products:
